Crunchy Peach Puffs

For breakfast or a mid-day snack. (Vegan options included)

Ingredients:

  • 1 peach peeled and cut into bite-sized chunks
  • 1 cup yogurt of choice (regular, almond, or coconut)
  • 2 tbsp puffed/popped quinoa
  • 1 tsp maple syrup
  • 1 tablespoon mixed nuts (optional)

Method:

In a short glass layer the popped quinoa, peach and yogurt and top with nuts if desired. Drizzle the maple syrup on top and devour!
